Appenzeller Classic Cheese comes from northeastern Switzerland, home to this delicious Swiss cheese variety, where the production of Appenzeller cheese dates back more than 700 years. This cheese has also been awarded PDO status, ensuring that Appenzeller is only made according to traditional methods, within a specific geographical area.
Only the highest quality milk is used to make this delicious cheese, which comes from local, alpine cows, grazing on a diet of grasses, herbs, and flowers.
As part of the ageing process, Appenzeller Classic Cheese (along with other varieties) undergoes brine curing. Each wheel is treated with a classified brine mixture including wine, cider, herbs, and spices. The brine recipe is a well-kept secret, stored under lock and key. This process lends the characteristic spiciness to the cheese, which grows stronger as it ages.
Appenzeller Classic is enjoyed by many, thanks to its mild, nutty flavour, with herbal spicy notes.
Pair with a Riesling or a Pinot Noir.
