Ricotta Salata Cheese, from Sicily, is an Italian cheese made from the whey of sheep's milk, which is pressed, salted, and aged for at least 3 months.
Unlike its younger counterpart Ricotta, Ricotta Salata has a crumbly texture, thanks to the pressing and ageing, which causes the cheese to lose moisture. The texture evolves into something closer to an aged feta.
Also unlike a young Ricotta, Ricotta Salata has a salty flavour, and a wide variety of uses.
Because of its texture, it can be cubed, sliced, grated, shaved, or simply crumbled. Use it in salads, atop soups, or anywhere you might use feta.

If you order several cheeses, we will usually make up for shortcomings on weight, if any, on the other cheeses ordered.
All cheeses are wrapped in special cheese paper and sealed to preserve freshness during transit.
