Mild with a little punch!

A lovely sheep’s milk cheese. The expected tang is there without overwhelming, combined with slight campfire and walnut skin. Pleasantly long lingering on the palate. Nice representation on a board of a slightly drier texture. Will order again.

Milk Type: pasteurized Sheep
Age: 6 Months +

Tasting Notes:

A hard to come by raw sheep-milk cheese produced in Navarra, Spain. The cheese is traditionally smoked over beechwood, hawthorn, or cherry for 10 days, giving it a slightly smoky finish. Made in the mountains where the Shepherds spent the summer in the highland pastures and came back in the fall with their cheese. The sheep migrate to higher pastures to graze on the newly blossomed grass in the summer, producing exceptional milk. The texture of Idiazabal is firm and we’ve been aging it further in-house
for an extra 4 months producing a slightly drier, denser paste. The flavours are buttery, nutty and smoky with sweet aromas.

Our cheese mongers hand cut every cheese to order. We will always try to cut the exact weight ordered, however your piece might be slightly over or under the amount listed. But please know that we cut it freshly and specifically for you.

If you order several cheeses, we will usually make up for shortcomings on weight, if any, on the other cheeses ordered.

All cheeses are wrapped in special cheese paper and sealed to preserve freshness during transit.

Every order includes all the necessary thermal packaging and ice packs required for current weather conditions. Our main focus is getting the freshest product delivered to your door.
