Occelli al Barolo Cheese is yet another decadent and beautiful cheese from Beppino Occelli, from Piedmont, Italy.
As a gold medal winner at the World Cheese Awards, this wine soaked "drunken" cheese is a must try!
After at least 5 months of ageing in the cellars, the cheese is brought over to the vineyards. There it is coated in the remaining pressed grapes used to make Barolo wine, and is further refined for 2 months.
The texture is wonderfully soft and flaky, with creamy, buttery, sweet, and sharp flavours. The taste of wine runs throughout, as it has seeped its way into the cracks of the cheese.
