The Asiago Mezzano Cheese follows a long tradition a cheese making. This particular cheese actually began as a sheep's milk cheese around the tenth century, with cow's milk version becoming more and more popular over time.

This cheese features a firm texture with irregular holes throughout. The flavour is mild, lactic, sweet, and salty, with aromas of honey, cooked butter, and flowers.

Pair with an Amarone or Valpollacella.
