Loved this cheese. The texture is great - not really soft nor crumbly, almost a little springy. And the flavor is unlike anything I've had. It definitely has the creaminess of a triple cream brie-style cheese, but with delightful notes of mushroom or something sort of earthy. Not funky, but sort of "deciduous". Will get again.
